Shui Jin Gui ( Golden Water Turtle ) is one of Wu Yi Shan's four famous yan cha. This tea is majestic and commanding: initial mild astringency gives way to a deep, mineral flavor that can only come from the rocky, mineral-rich soil composition of the Wu Yi Shan. The flavor of Shui Jin Gui changes over the course of multiple infusions and at times is reminiscent of caramelized squash, spicy carnations, and chocolate. The traditional, heavy roasting underscores the flavor of the tea with the warm welcome of a low temperature, slow-burning, wood ash fire (ember-only), and gives the tea a long, satisfying finish.. A noble tea from a venerable terroir.
Western-style steeping: (Medium to large sized teapot: 20-32 oz)
Use 2-3 heaping teaspoons (2-3 grams) of tea per each 6oz water
Steep 1-3 infusions at 2-3 minutes each
Water temperature should be 195° - 205° F
Asian-style steeping: (small teapots under 10 oz or a gaiwan)
Use 2-3 Tablespoons (5-6 grams) of tea per each 6oz water
Steep upwards of 6-8 infusions (or more!) at 10 seconds to 1 minute each
Water temperature should be 195° - 205° F |
